Vendakkai Fry (Okra / Bhindi / Lady's Finger Fry)

              Hello all... Vendakkai Fry is a healthy and a simple stir fry recipe. Vendakkai is roasted with onions until they are browned and caramelized.   


       

     Vendakkai is a vegetable which is gooey when cut into small pieces, but there are few tips to overcome that and make sure vendakkai is roasted and browned. 

       Vendakkai fry is perfect for lunch. It can be served with sambar rice, dhal rice, curd rice, rasam rice, etc...




Few tips to follow
  • While buying Vendakkai, check if it is tender. (To check tenderness, break the tail end of vendakkai using your thumb and it should break easily.)
  • Before cutting the vendakkai rinse it well and dry it with a kitchen towel.
  • Use 1/2 tsp curd while frying vendakkai to take the gooeyness.

  • If you want to use less oil and do not want to use curd, microwave cut vendakkai for 5-8 minutes with 1tsp oil. Pause every 2 minutes, stir and then microwave again. Do not use water while microwaving. Use the microwaved vendakkai in your recipe.

 Prep time: 10 mins    Cook time: 20 mins     Serves: 2


Ingredients
  • 500gm Okra
  • 1/4 cup Onion (Finely chopped)
  • 1 Green chili (Slit lengthwise)
  • Few Curry leaves
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Urad dal
  • 1/4 tsp Turmeric powder
  • 1 tsp Coriander powder (Optional)
  • 1/2 tsp Curd (Optional)
  • 2 tbsp oil
Procedure

1. Cut vendakkai and onion into small pieces.


2. Microwave vendakkai for 5-8 minutes with 1 tsp oil. For every 2 minutes take vendankkai out and stir.(Ignore this step if using curd )


3. Heat oil in a pan or kadai. Add mustard seeds.


4. When mustard seeds crackle, add urad dal, curry leaves, green chili and onion.


5. When onions are soft, add Vendakki and sautĂ© for 2 minutes.


6. Add turmeric powder and coriander powder and sautĂ© for 3-5 minutes or until the vendakkai are roasted and browned. (If using curd, add curd)


7. Serve it with white rice.



Microwaving is optional. If you do not want to microwave, use 4 tbsp oil for frying vendakkai. It may then take up to 20 minutes for frying vendakkai.
