Hello.....I hope you all had a nice weekend.. I would like to start the week with an easy recipe for fried rice... You can load it with vegetables, eggs or chicken pieces as you wish... It is so simple to prepare if you have some leftover rice in your hand...
You can serve Egg Fried Rice with Gobi Manchurian, Chicken Manchurian, Pepper Chicken, etc...
I prepared egg fried rice with pepper chicken for lunch. In this post I am sharing my recipe for fried rice. Check Pepper chicken recipe here.
Procedure
1. Cook Basmati rice with 1 & 1/2 cup water and allow them to cool by spreading it in plate so that rice is not sticking together.
2. Heat a pan or wok with oil. Add onion and green chili to it and sauté till onions are light brown with some salt and pepper.
3. Keep the onions separately.
4. In the same pan add the vegetables with salt and pepper. Sauté them till vegetables are half cooked and still crunchy.
5. Keep the vegetables separately.
6. Add ghee to the pan and then add eggs with salt,pepper and scramble them.
7. Add cooked rice, vegetables and onion to the egg.
8. Mix them thoroughly with salt and pepper to taste. Add green onions and a dash of soy sauce.
9. Thats it. Serve the Fried Rice hot. I told you.. This is an easy recipe.. Isn't it ?

Yummy Egg Fried Rice !!!
Prep time: 10 mins Cook time: 20 mins Serves: 2
Ingredients

- 1 tsp Green Onion (Optional for garnishing)
- 1/2 cup Vegetables (Carrot, peas, beans, corn, capsicum, cabbage, etc.)
- 3 Eggs
- Pepper to taste
- Salt to taste
- 2 tsp Oil
- 1 tsp Ghee
- A dash of Soy Sauce

- If you want to prepare Vegetable Fried Rice, add more vegetables and don't add eggs to this recipe.
- If you want to prepare Chicken Fried Rice, add some cooked shredded chicken to this recipe.
