Kathirikai Murungakkai Vathakal (Brinjal Drumstick Fry)

               Brinjal and drumstick are always a good combination... With brinjal and drumstick, you can make sambar, fry, curry, masala, etc... You can use fresh or frozen drumstick in this recipe. 

               Kathirikai Murungakkai Vathakal can be served with sambar rice,rasam rice, dal rice, curd rice or just white rice with little ghee..




Prep time: 5 mins         Cook time: 20 mins      Serves: 2

Ingredients
  • 3-4 Brinjals (About 2/3 cup)
  • 1 Drumstick (About 2/3 cup)
  • 1/3 cup Onion (Finely chopped)
  • 1 tbsp Oil
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Urad dal
  • Few Curry leaves
  • A pinch of Asafoetida
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Red Chili powder
  • 1 tsp Coriander powder
  • 1/4 tsp Cumin powder
  • Salt to taste
Procedure

1. Cut brinjals lengthwise and immerse in water, so that they do not change color. Cut drumstick in 1 inch length.


2. Heat a pan or kadai with oil. Add mustard seeds. When they crackle, add urad dal, curry leaves and onion. SautĂ© for 4-5 minutes.


3. Drain brinjal from water and add to the onions. Then add drumstick.

4. SautĂ© for 2 minutes.


5. Add all the spices and salt. SautĂ© for 3 minutes.


6. Sprinkle some water, cover and cook for 7-8 minutes or until drumstick and brinjal are cooked softly. Then sautĂ© for 2 minutes.

7. Kathirikai Murungakkai Vathakal is ready to serve....



While cooking brinjal and drumstick sprinkle few drops of water. Do not add more water, then the fry would become soggy.
