Lemon Rice

      Hello Again !! .... Lets start this week with a real simple recipe, Lemon Rice.... It is so simple to prepare and extremely healthy. 

Lemon Rice is a good option for lunch or dinner on days where you feel so lazy and want to spend less time in Kitchen.

    Lemon Rice can be served with Vadai, Potato Fry, Vadagam, Chips, etc...


Prep time: 5 mins    Cook time: 5 mins     Serves: 2

Ingredients
  • 2 cup Cooked Rice
  • 1/2 Lemon
  • Salt to taste
For tempering
  • 1 tsp Mustard seeds
  • 1 tsp Split Urad dal
  • 1-2 tsp Chana dal
  • 1 Green Chili (Slit lengthwise) or 1 Red Chili
  • Few Curry leaves
  • 1 tbsp Coriander leaves (Finely chopped)
  • 1/4 tsp Turmeric powder
  • 1 tsp Oil
Preparation
1. Heat oil in a pan. Add mustard seeds. When mustard seeds crackle, add urad dal, chana dal, green chili, curry leaves, coriander leaves and turmeric powder.



2. Saute for 1 minute and switch off flame.

3. Squeeze lemon juice and salt in the pan. Be sure not have any lemon seeds.



4. Add rice. Mix it well. Thats it... Lemon rice is ready... I told you.. Its that simple...!!



  • Do not cook lemon juice. Add lemon after switching off the stove, that gives nice flavor to lemon rice.
  • You can add peanuts and cashew nuts while tempering.
