Mulu Kathirikai Kuzhambu (Whole Brinjal Curry / Kathirikai Puli Kuzhambu)

               Brinjal Curry is a delicious curry and has an awesome flavor. It is an authentic South Indian curry which is cooked in tamarind and coconut paste. Of course, it's a spicy curry which everyone likes.

               Brinjal Curry can be served with hot rice and any vegetable of your choice.




Prep time: 10 mins       Cook time: 25 mins        Serves: 2

Ingredients
  • 4 Brinjals
  • 1/3 cup Onion (Finely sliced)
  • 3 Pearl Onions
  • 1 tsp Tomato
  • 1 tbsp Coconut (Shredded)
  • 1-2 tsp Sambar powder
  • 1 tsp Tamarind
  • Few Curry leaves
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Split Urad dal
  • 1/2 tsp Fenugreek seeds
  • A pinch of Asafoetida
  • 2 tsp Oil
  • Salt to taste
Procedure

1. Soak tamarind in water and get tamarind extract.


2. Remove the stem from brinjal and slit them.


3. Soak brinjal in water, so that their color don't change .


4. Heat a pan with oil. Add pearl onions,tomato, coconut and 1/2 tsp sambar powder and sautĂ© them till coconut turn brown. Let it cool and grind into smooth paste.


5. Heat a pan or cooker with oil. Add mustard seeds and when it sputters, add urad dal, fenugreek seeds, curry leaves and onion.


6. SautĂ© onions for 5 minutes. Add brinjal, asafoetida, 1 tsp sambar powder and ground masala. SautĂ© for another 4 minutes


7. Add salt and tamarind extract. Let it boil.


8. If cooking in cooker, close the lid and after a whistle, lower the flame for a minute and switch it off.
If cooking in pan, close it with a lid for 5-8 minutes or until brinjals are cooked.


9. Your Whole Brinjal Curry is ready. Serve it with hot rice.
