Spicy Chicken Curry

     Hi... Today am gonna pen down an easy-to-follow recipe of Spicy Chicken Curry... Spicy Chicken Curry has a nice flavor with all the spices freshly grounded... You cannot resist eating this...

    You can cook spicy chicken curry in a pan or kadai with lid or in a pressure cooker. I prepare it in cooker.

    Spicy Chicken Curry can be served with white rice, chapati, naan, dosa, etc...




Prep time: 10 mins    Cook time: 20-30 mins    Serves: 2

Ingredients
  • 1 lb Chicken (Cleaned)
  • 1 Onion (Finely chopped)
  • 1 Tomato (Finely chopped)
  • 1/4 tsp Cumin seeds
  • 1/4 tsp Fennel seeds
  • 1 Bay leaf
  • 2 tsp Ginger Garlic paste
  • 2 tbsp Oil
  • 3-4 tsp Masala
  • 1/4 tsp Turmeric powder
  • Salt to taste
  • 2 tbsp Coriander leaves (Finely chopped)
For masala (masala proportion is for 2-3 lb chicken)
  • 3 tbsp Coriander seeds
  • 1 tbsp Pepper corns
  • 2 Star anise
  • 3 pieces Cinnamon (1 inch each)
  • 4 Cardamom
  • 3 Cloves
  • 12 Red Chilies
  • 1 Spring Curry leaves
  • 1/2 tsp Fenugreek seeds
  • 1 tsp Cumin seeds
  • 1 tsp Fennel seeds
Procedure

1. Dry roast all the ingredient under masala and allow it to cool. Then grind it into a nice powder.


2. Heat the vessel in which your going to cook with oil. Add cumin seeds, fennel seeds, bay leaf and onion.

3. Saute for 2 minutes and add ginger garlic paste.


4. Saute till raw smell goes.

5. Add tomatoes and sautĂ© till they become soft.


6. Add chicken and turmeric. SautĂ© for 3 minutes.


7. Add the masala powder and mix well.


8. Add water and salt.


9. If cooking in pan or kadai, close the lid and cook for 15 minutes or until the chicken pieces are cooked softly. SautĂ© them in-between.
    If cooking in cooker, close it. After a whistle, bring it to low flame for 4-5 minutes and switch off. Open the cooker when the steam is released.


10. Spicy Chicken Curry is ready to serve. Garnish with coriander leaves while serving.


Store the excess masala powder in an air tight container for further use.
